Tasty, light, healthy!

I experimented with spaghetti squash today in my attempt to replace some of the carbs I consume.

I made it for lunch and combined it with tuna.

STEP 1) Cut spaghetti squash lengthwise

STEP 2) Remove all the seeds (using a scraper tool helps this job immensely)

STEP 3) Put it skin side down and bake for 30-40 minutes at 375F (poke to see if its cooked)

STEP 4) Use a fork and get all that good stuff out of the shell (careful, it’s hot!)

STEP 5) Add whatever you want to it – pasta sauce or in this case I added:

-1 can tuna
-extra virgin olive oil
-red pepper flakes
-black pepper
-salt
-cilantro
-juice of half a lime
-sesame seeds

STEP 6) Toss and mix together & serve!

Voila! A healthy, yummy lunch!
