Meet Greta! She’s my first organic chicken I’ve ever bought from a local farmer! I was oober stoked to roast her tonight! She turned out SCRUMPTIOUS and my recipe is so EASY!
Step 1: Preheat oven 375F
Step 2: Wash chicken with cold water and lemon juice
Step 3: Pat dry
Step 4: Insert quartered onion & lemon, 2 cloves of garlic and 1 celery stalk cut up
Step 5: Melt some butter, add olive oil and spices (I used fresh rosemary and poultry seasoning). Mix it all together and rub all over chicken
Step 6: Put it breast side down in a shallow oven-safe dish and put in middle rack. Bake for approx. 1.5 hours. (Time depends on the size of the bird)
Step 7: After one hour, baste the bird with the juices that are now in the dish then flip it beast side up. Continue to bake until inner temperature is 165F / until juices run clear.
Step 8: Take chicken out and let it rest (even though we all know YOU did all the work) for 15 minutes. Then carve her up!
It was one of the most delicious chickens I’ve ever had!
